Dom Oudart

The champagne industry owes much of its prosperity and renown to such Abbeys as Saint-Nicaise, Hautvillers, Vertus and Orbay. In 1680, responsibility for the Pierry estate (the Saint-Pierre-aux-Monts Abbey) was conferred upon converted friar Jean Oudart. Along with other innovative monks responsible for finance from neighbouring abbeys, Dom Oudart contributed to the development of champagne-making methods that have since made the reputation of champagne. From every tributary abbey, monks came to learn the secrets of the process developed by Dom Oudart.
